Ingredients for the Smashburgers

  • 3 oz smashburger balls (80/20 Ground Chuck or 80/20 grass-fed) (1 or 2 per person)
  • 1 oz melty garlic cheese for each patty
  • Brioche buns
  • Garlicky dill pickles
  • Shaved sweet onions
  • Roasted garlic sauce (see recipe below)
  • Salt and pepper
  • Garlic oil from roasting garlic

To make the Smashburgers

  1. Preheat ½ the griddle for 20 minutes on medium heat and the other ½ on low.
  2. Season loosely rolled burger balls well with salt and pepper
  3. Spread some garlic oil on the surface of the griddle.
  4. Place the buns cut side down on the low heat side and toast until just brown.
  5. Remove and place onto clean tray to ready for assemblage.
  6. Next place burger balls onto the hot side of the griddle.
  7. Top each burger ball with a good amount of shaved onion.
  8. Using the burger press, smash the burgers as thin as you can get them.
  9. Cook on one side until the meat is well browned and the sides are beginning to look crispy.
  10. Flip the burger and cook until onions are just starting to caramelize.
  11. Top with cheese and melt well.
  12. Transfer the cooked burger to the bottom buns then top with pickle slices.
  13. Spread a good amount of sauce on the toasted side of the top bun.
  14. If you want, add more toppings such as Boston Bibb lettuce or Heirloom tomato slices.
  15. Place the top bun on, place the completed burger onto a plate.
  16. Grab some napkins and enjoy.

Ingredients for the Roasted Garlic Sauce

  • ½ cup garlic cloves that have been roasted in neutral oil (save the oil to cook buns and burgers)
  • ¼ cup ketchup
  • 2 tablespoon whole grain mustard
  • 2 tablespoon hot sauce
  • 2 tablespoon worcestershire sauce
  • Salt and pepper to taste

To make the Roasted Garlic Sauce

Procedure: Place all ingredients in Food Processor and blend until smooth. Taste and adjust as needed.
